PhotoGene
PhotoGene is a photo-fixing tool for iPhone with crop, straighten, sharpen, color-tweaking, framing, emailing and other features. It provides all these features at the full resolution of the iPhone cameras (2MP/3MP). It saves edited pictures to the iPhone camera roll or to the iPod's saved photo library.

Although simple in comparison to desktop image editors, PhotoGene has a surprising number of features, including the ability to add speech bubbles and text to the image.
It is well documented with tutorials and FAQ, and there are plenty of samples on the developer's website.
